I have a recipe for these in my cookbook, Eat like a Cosmopolitan Hippy. These are same same but different. And they are even easier than the originals. But still as tasty.
Ingredients 3/4 cup berry juice (or juice of your choice) 2 tablespoons grass fed gelatin 1 tablespoon maple syrup (optional)
Equipment Essentials Thermomix OR Hand beaters, glass bowl and saucepan Square glass or silicon tray/container
Make Me Up In the bowl of your thermomix add the juice, gelatin and maple syrup. Heat 80deg/speed2/6min. Allow to cool completely to room temperature (this may take a while) and then add in the butterfly attachment. Whip at speed 4 for 7 min or until very fluffy.
Heat the juice on the stove top with the gelatin and maple, just until warm and the gelatin has dissolved. Pour into your glass bowl and set aside to cool to room temperature. Once cool, using your hand beaters, whip the gelatin mixture until tripled in size and very fluffy.
Transfer immediately into your glass or silicone container and place in the fridge to set. Once set, cut into squares or shapes with a cookie cutter.
