Lately I have been obsessed with smoothies. I usually have one in place of lunch, because sometimes it's just too hard to adult. This one is based on one that I had at Thr1ve in Melbourne. Have you been there? It's fast food court food like you've never had before. Clean and delicous and totally Cosmopolitan Hippy Approved.
But if you can't get there, then you can re-create my favourite of their smoothie at home.
Place coconut, cacao butter, chia seeds, dates, salt and vanilla in the thermomix (speed 10/1min) till finely ground. Add the cashew butter, almond milk, gelatin and blitz till well combined. Serve in tall glasses or if you are totally hipster, a mason jar.
