Lady A and I threw these together for a morning tea. Really easy and a great one to get the kids to help with pressing their thumbs into. Oh and they are really yum too. I usually make up a big double batch of my Salted Caramel from my Salted Caramel Tart recipe in my cookbook (page 148) and have it in a jar in my fridge, ready for a moment notice baking (or to eat with a spoon…).
Throw all of your cookie ingredients into your mixing bowl and mix together by hand with a wooden spoon or thermomix (speed 5/3 min).
Once the dough has come together, roll it into 12 equally sized balls and line them up on your baking tray. Carefully press your thumb into the centre of each cookie, making a well to hold your delicious caramel. You may need to reshape the cookies as they can crack a little when you squish them. Fill the centre of each cookie with a small amount of caramel.
Place the cookies into your pre-heated oven and bake for 15-20min until golden.
These are still pretty delicate cookies so best to allow them to cool, even just a little, before serving. They will firm up in the fridge.
