Rainy days are for baking. These little cookies are so soft and a little fudgy, it would be hard to stop at just one, but because of all the good fats from the nuts and oils, they are super filling.
Great on their own or smeared with nut butter or dunked into a glass of almond milk.
Soft Chocolate Cookies
Paleo, gluten free, dairy free
Makes about 20
1 cup quinoa flour 3/4 cup almond meal 1/3 cup maple syrup 1/4 cup raw cacao 2 tablespoons coconut oil 1 tablespoon olive oil 3 teaspoons coconut flour 1/2 teaspoon baking powder 1 egg
Baking tray lined with baking paper
Make Me up
Mix all the ingredients together, divide into 20 small balls and place on a lined baking tray. Flatten with a fork. Bake for 10min in a 160deg oven. Allow to cool and then serve.
