I was getting an eye twitch the other day. Perhaps it is the sleep deprivation and stress that having an infant, a pre-schooler and a business to run all on your own while your husband works out of town, or perhaps it was a magnesium deficiency. Praying it was the later, I whipped up a batch of this mousse, mainly because I didn't have the foresight to see the twitch coming and so didn't make an overnight chia pudding. This however, turned out super delicious. So I thank my eye twitch for this recipe.
Choc Chia Mousse
Makes 4 serves
1/4 cup chia seeds 1/4 cup hemp seeds 1/2 cashews 1 can coconut cream (400g) 2 tablespoons Great Lakes gelatin (the green one - I add it for extra nutritional punch, you don't need the read one, because you don't need it to gel, the chia seeds will do that for you.) 2 tablespoons raw cacao 2 tablespoons maple syrup 1 banana
High Speed blender or thermomix
Make Me Up Chuck all you dry ingredients into your thermomix or high powered blender and blitz for 1 min till you have a fine powder. Add your wet ingredients and banana and blitz for 2-3 min until you have a thick mousse consistency. Pop left overs into the fridge and they will set like this thick chocolatey goodness.
