Recipe: Raw Turkish nougat tart

I love anything with a Moroccan Turkish flavor. This is based on a raw slice I had in a tiny raw café in Vienna. I kept dreaming of a piece of this after dinner with a cup of peppermint tea. Just pure heaven. Not everyone loves rosewater (are they crazy?!) so you could leave the rose water out or replace it with a little orange zest. Use macadamias and rice malt syrup to make it FODMAP friendly.

Raw Turkish Nougat Tart

Raw, vegan, gluten free, grain free, dairy free, paleo, no refined sugar

Ingredients

Base

1 cup cashews (or macadamias)

½ cup coconut (shredded or dessicated, it wont matter)

¼ cup sesame seeds

¼ cup coconut oil

1 tablespoon rose water

½ tablespoon raw honey (or rice malt syrup)

¼ cup pistachios, chopped

Chocolate top

1/2 cup cashews (or macadamias) ¼ cup cacao 2 tablespoons coconut oil 1/4 cup coconut cream 1 date 1/2 tablespoon raw honey (or rice malt syrup)

Make me up.

The Base

In the bowl of your food processor or thermomix add the sesames seeds and process until they are fine (thermomix speed 10 – 30seconds). Add the cashews and coconut and process until you get a fine crumb (thermomix speed 8 for 1 minute) then add your rose water, coconut oil and honey and process until the mixture comes together (thermomix speed 5 - 30 sec). Then add the chopped pisachios and stir in by hand (or add to your thermomix, reverse, speed 4 – 10 sec).

Press the mixture into a tart tin and place in the freezer while you make the chocolate top.

The Top

Don’t worry about washing the bowl of your food processor or thermomix, waste of time, plus it will add extra flavor.

Place your nuts in the bowl of your food processor or thermomix and process until they are a fine crumb (thermomix speed 10 – 30seconds). Add all the other ingredients and process until the whole thing comes together in a fudgy paste (thermomix speed 8 – 1 minute).

Take your prepared base out of the freezer and spread the chocolate top on top.

Place in the fridge to set for at least 2 hours. Cut with a serrated knife and serve. Will keep in the fridge in an air tight container for up to 2 weeks.
