Immune Boosting Veggie Curry
It's chilly even here in Darwin! Immune Boosting curry for dinner. It's everyone's favourite. I make the sauce in my thermomix and then put it in a pan with the veggies to cook because the batch is too big for the thermomix.
Toast: 1 teaspoon of each: cardamom pods, cloves, cumin seeds, fennel seeds, coriander seeds Once toasted, grind and add 3/4 cup tomato passata 2 cups bone broth (or water to keep it vegan) 1x 400g can of coconut cream 2 tablespoons turmeric 1/2 teaspoon ground cinnamon 2 large thumb size pieces of ginger 2 large garlic cloves 2 spring onions Salt to taste Blitz up to make a sauce Put the sauce in a pan with 1/4 cup coconut oil Reduce the sauce by a half then add veggies. I used: Zucchini Sweet potato Carrots Asian greens Red Cabbage Broccoli Cook till all veggies are tender.
