Blueberry and Strawberry Muffins

I think I might have cracked this muffin thing. Perfectly fluffy blueberry muffins topped with a strawberry, because everyone knows you can't bake strawberries into muffins.

Ingredients

85g almond meal 135g buckwheat flour 3/4 cup coconut cream 1/2 cup coconut oil 1/2 cup frozen organic blueberries 2 eggs 2 teaspoons lemon juice 2 teaspoons raw honey 1 teaspoon baking soda

Thermomix or Food Processor

Make Me Up

Pre heat your oven to180degC. Grease your muffin tin with coconut oil. Place all ingredients (except blueberries) into your thermomix and blitz on 8 for 3 min. Then add blue berries and process in reverse for 3 sec to mix through. Spoon the mixture into prepared muffin tin and bake for 10-15min until the tops are golden and a skewer comes out clean.
