Savory Green Muffins

When Lady A is being a bit fussy and refuses to eat anything green, I hided some in these muffins. With these savory muffins, Mr CH thinks I have finally mastered the savory paleo muffin! They are pretty tasty, and even Lady A ate a whole one, no fuss. Although I did have to remove the "mato" as she's not into tomatoes.


3 eggs 1/2 cup coconut oil 3/4 cup grated zucchini 3/4 cup finely sliced baby spinach 1 tablespoon chia seeds 2 tablespoon nutritional yeast 1 tablespoon apple cider vinegar 1/2 teaspoon salt 1/2 cup arrowroot flour 1/2 cup coconut flour 1 teaspoon bi carb soda 1/4 cup sunflower seeds 12 cherry tomatoes, halved

Equipment Essentials

Thermomix or food processor

Muffin tin

Make Me Up Add your eggs and oil to your thermomix and process speed 6 for 1 min. Add zucchini, baby spinach, chia seeds and apple cider vinegar, process reverse, speed 3, 1 min. Then add the remaining ingredients (expect sunflower seeds and tomatoes) and process, reverse, speed 4 for 1 min. Spoon mixture into muffin tins, top with sunflower seeds, cherry tomatoes and an extra sprinkle of salt. Bake in a pre heated oven, 180degC for 6 min or until a skewer comes out clean. Allow to cool for at least 10min before you dig in.
