Paleo Vegan Cheese Sauce (with hidden cauliflower).

Lady a loves anything cheesey, but like me, dairy doesn't love her back. Last night we had baked potatoes with the bolognase she and Mr CH made and I thought I would make a little cheese sauce as a treat. It was a huge hit. She even asked for it on her breakfast this morning. I'm thinking it would be a great substitute for a bèchamale sauce.
Cheeze Sauce
Ingredients 1 cup cauliflower 1/2 cup nut milk (I used almond, but cashew would be nice) 2 tablespoons nutritional yeast 1 tablespoon coconut oil/ghee Pinch of salt Small clove of garlic, crushed Pinch of smoked paprika Equipment Essentials Thermomix or high speed blender and saucepan
Make Me up Thermomix version Place all your cauliflower in your thermomix and chop, speed 5, 10sec. Next, add all of your other ingredients and cook, 100deg, speed 2, 10min. Once cooked, blitz, speed 7, until smooth and serve.
Non-Thermomix Version
In your saucepan place chopped up cauliflower, salt, ghee/coconut oil, garlic and salt. Bring to a simmer and cook until cauliflower is soft and falling apart. Transfer this mix to the blender and add your nutritional yeast and paprika and blend until smooth.
*note: if your cauliflower has a lot of water in it you will need to reduce the amount of nut milk, or add a little tapioca starch and cook it for a few minutes. The tapioca will make the sauce "stretchy" and give it that cheese consistency.
