More gummy recipes! But what they hey. These are great. If you don't make your own kombucha (a fermented tea, recipe and info in my cookbook, Eat like a Cosmopolitan Hippy, that is full of good probiotics), then you can just buy a bottle or already fermented and flavoured kombucha. I would recommend a berry flavour like strawberry or raspberry.
3 cups of second fermented Kombucha (see note)
6 tablespoons Great Lakes grass fed gelatin (the red one)
3 tablespoons maple syrup
2 tablespoons natural rose water
Thermomix OR saucepan and whisk
Glass or silicone dish or silicone egg moulds
Make Me Up
Kombucha is a live probiotic drink, so you don’t want to heat the entire thing up, because you will kill the good guys. So in the bowl of your thermomix or saucpan, place 1 cup of the kombucha along with the gelatin and maple syrup.
Thermomix - 80deg/speed 3/ 7min.
Stove top, heat on medium and whisk continuously until the gelatin has dissolved. Do not allow it to boil.
Once the entire gelatin is dissolved, add the remaining kombucha and the rose water to the mix and mix until the 2 are well incorporated (thermomix speed 3/ 3 min).
Now pour your kombucha jelly mix into you glass container or silicone egg moulds. Place in the fridge to set overnight.
Note: To second ferment your kombucha simply drain it off into a glass jar or bottle when it is still slightly sweet and then add ½ cup of fruit to 1 litre of kombucha. Seal the vessel tightly and leave overnight. Then place it in the fridge to store. This recipe calls for strawberry, but raspberry is good so it blueberry and ginger, ginger, cinnamon or apple.
