I love baking cake, like all the time. But my everyday cakes tend not to having icing. Too fussy and way too much effort for an everyday cake. But for birthdays, well, that calls for something special.
I've played with lots of different cakes and icings before, normally I made a fudge type icing based on nuts, (if you haven't already done it, go and download my birthday cake e-cookbook for my hummingbird cake, lamington cake and double chocolate cake recipes). But when my oldest daughter asked for a unicorn birthday cake, I had to try my hand at something...whiter.
THIS is what she was after.
It's white. Whiter than white. And when you cook with all natural (read NON REFINED) ingredients, white is hard to come by.
But I came up with a plan.
It would also give the added benefit of hiding my favourite ingredient, gelatin in it.
Double boiler (that is a glass bowl over a saucepan of boiling water)
Make Me Up
Set up your double boiler. In your glass bowl add your honey and vanilla and sprinkle over your gelatin. Allow the gelatin to melt. Once the gelatin has melted, add your egg whites and beat them on high with your electric beaters until the mixture is pale and fluffy. Then, turn off the stove and remove the glass bowl from the saucepan and place on a cool surface (I seriously do this on my floor). Continue to beat the egg white and honey mixture until the bowl and egg whites have cooled down. The icing should be thick and glossy and smooth. Spread it onto the cake quickly.
Allow to set for about 15-20 minutes before you start decorating.
***Note: I have also made this icing coloured by adding a few drops of natural colouring. I use the hoppers brand***
